Gin-manufacturing
At Whaler Gin, we start with maceration. Botanicals are soaked in a mix of neutral grain alcohol and water. This lasts for two days, releasing essential oils and flavours.
Next, we heat the mix in copper stills. The heat causes the alcohol and oils evaporate, separating them from the solid botanicals. The vapour rises, cools, and turns back into a liquid, now full of botanical flavors. We collect the distillate in fractions, keeping only the "hearts" for the best taste.
We use the Single-Shot Method. The entire distillation happens in one go, producing a high-proof distillate. The distillate is diluted to 46 percent alcohol with only water. This method retains the concentrated essence of the botanicals, avoiding additional alcohol.
We also use steam extraction. Alcohol vapours pass through a basket of botanicals, capturing their flavors. This method provides a soft, aromatic profile.
Our gin rests in 1,000-liter pots for 60 days, allowing the flavours to blend and mellow. Part of the distillate is aged in German oak barrels. This ageing process creates a well-rounded, distinct flavour.
